My Gingerbread Recipe
- 1 1/3 cup of flour
- 1/2 cup firmly packed brown sugar (dark brown if you can find it)
- 3/4 tsp cinnamon
- 3/4 tsp ginger
- 1/2 tsp allspice
- 1/2 tsp baking powder
- 1/2 tsp baking soda
- 1/2 cup butter (softened, NOT melted)
- 1/2 cup boiling water
- 1/2 cup molasses (i use blackstrap molasses-light just doesn’t cut it)
- 1/4 tsp vanilla
- 1 egg
heat oven to 350F
spray 8” pan
in large bowl, combine first 7 ingredients
add boiling water to molasses, butter & vanilla
combine all ingredients (egg last), and mix thouroughly
bake at 350F until done (20-30 minutes)
also: you can do as cupcakes (convenient single-serve gingerbread!!!). cook for 18-20 minutes @ 350F. makes about 15 cupcakes.
